Now just to get started, here is a simple recipe for chicken breasts with onions, peppers, and salsa. The amounts to be used vary according to the number of servings you are planning.

Recipe
Chicken breast halves
Onions
Green peppers
Salsa
Garlic and/or other spices (optional)

Slice onions and peppers, and put them in the crock pot first. Cut raw chicken breasts (not frozen) into chunks, and add them on top of the veggies. Then top with salsa (about 1/2 cup per chicken breast). Cook for four or six hours depending on your schedule. If you want to add other spices, you can throw in a garlic clove or two with the chicken and other spices such as cayenne pepper, oregono, basil, parsely flakes, etc. as desired, but really the salsa will probably be enough.

Serve with your favorite bread or rolls.

The Day before the THE DAY Before CHRISTMAS

So that most wonderful time of the year is finally here for the excited kids and the weary parents! And today is the day before the day before! Maybe you are one of those wonderful powerhouses who has been planning the family meal since September or perhaps you are someone who already has the dinner reservations at the local favorite restaurant. Fall’s coming, what’s cooking?

What a wonderful time of year! Although the weather this year (2011) has been somewhat surprising at times, the east coast is revving up to produce one it’s best fall seasons ever. And at this time with falling leaves and good sized pumpkins and seasonal Octoberfests just around the corner, the crockpot is the way to go for an easy meal. EasyCrockpotMeals.com presents a recipe for the fall season that is sure to make your list of simple meals to prepare. Whether you are setting up for a Sunday afternoon football party at home or a Saturday night church dinner, try this recipe for cheese soup on for size and see if you and your company have ever tasted anything so fitting for a simple meal.

CHEESE SOUP–East Coast Style

2 cans (10 3/4 ounces each) condensed cream of celery soup,
4 cups (16 ounces) shredded Cheddar cheese
1 teaspoon paprika
1 teaspoon Worcestershire sauce
1 1/4 cups half-and-half
Salt and black pepper, sparingly

1. Combine soup, cheese, paprika and Worcestershire sauce in crockpot
2. Cover; cook on low setting (meaning pick the setting that has the lowest heat setting even though the time may be for 8 or 10 hours–only cook it for about 2 hours!
3. After 2 hours add the half-and-half and let it cook for maybe 1/2 hour more till the soup is warm through and through. Turn off the crockpot.
4. Taste and adjust seasonings.

Cheese soup recipe serves 6.

Other variations include replacing the half-and-half with beer. In any instance the effect is still creamy, smooth and tasty cheese soup.

Easy Crockpot Meal Barbecue Ribs

So it’s the 4th of July and even if you are expecting thunderstorms and scattered showers like we are today, you still want to barbecue! Now what do you do? You pull out your crockpot, of course. Now you have the best of both worlds, the seasonings and taste of your favorite barbecue sauce and the slow cooking process of the crockpot.

Here is one of my thrown together recipes for tender, juicy pork barbecue ribs using a crockpot. Note the steps are simple and it’s just a matter of getting up early enough to put the ribs on and then going about the rest of your day knowing that the ribs will be ready by the time the company shows up if you are having a get together. Even if you aren’t having a party, this is a nice meal for the family and the 4th of July barbecue will still be a success.

Recipe for Easy Crockpot Barbecue Ribs

Ingredients

1 Slab of pork ribs 3 to 4 lbs
1 bottle of favorite barbecue sauce
Other ingredients that help the barbecue sauce
such as cayenne pepper, black pepper, Worcestershire sauce, brown sugar,garlic, dry mustard, onions

Directions
1. Wash the meat to clean off blood from the package–I do this very
thoroughly to cut out the risk of food poisoning.
2. If you want to speed things up, put a pot of water on and parboil the ribs for 20 minutes–no more than 20 minutes!
3. If you wish, combine the dry spices and after draining the ribs pat the spices over the ribs placing the ribs in the crockpot.
4. Pour your barbecue sauce over each piece of rib; with the rest of the sauce pour enough to just cover the ribs in the crockpot.
5. Set the crockpot for either 6 hours or 8 hours.
6. Once the ribs are done, remove the meat and use the juices as
additional sauce in a serving dish (gravy pot) for the meal.

Easy Crockpot meals when it’s hot

Yes it is almost summer (just a few days now) and soup may not be in your plans but would a good stew work?  Crockpots are excellent for putting together a collection of fresh vegetables and meat with a filler and creating a stew which meets the need for a simple summer meal.

Stews are also a wonderful way to blend in lots of different ingredients that your family might not otherwise eat.  In any meal planning a big priority is to assure that you get the proper nutrition from each meal.  A good stew with a mixture of vegetables can expand the nutritional value of your stew while making for a delicious filling meal.  Such a stew will turn out  delicious, as well as filling and healthy.

In addition to the use of vegetables with your stew meat, the use of spices can deeply enhance the flavor and tastiness of one of your easy crockpot meals. Knowing your spices is a very important key to taking an ordinary meal to the next level.  Even a good beef stew can get pretty bland with just vegetables but the addition of the right spices can make a stew come alive with flavor.  Each stew ingredient interacts with spices differently.  For instance, with the addition of cumin and chili powder, a routine tomato beef stew can become beef chili.  With the addition of Mexican spices, and some beans, beef stew can become a tangy, spicy chili that can become the hit of the dinner.  Learning to experiment with spices and getting to know what kind of effect different spices like oregano, thyme, rosemary, cayenne pepper, paprika, and dill can have on your stew can make all the difference in your easy crockpot meal.

Finally, when cooking stews, be on the lookout for new and interesting stew recipes.  Cooking web sites and blogs are a good source of new innovations on the standard stew from a crockpot idea.  By keeping your stews always changing, you can use this basic concept as a simple way of creating your easy crockpot meals.
